Line a greased eight-inch flan ring with half the pastry. Put the breadcrumbs on the bottom of the pastry case. Peel and core the apples and cut them in rings. Put the apple rings into the pastry case and cover with the remaining ingredients, putting the lemon slice on top. Cover with the remaining pastry. Brush with milk and bake at 350°F, 180°C, gas mark 4 for forty-five minutes until golden-brown. Eat hot with thick cream.
