Victoria sponge is surely the most traditional summertime cake in the UK. It’s the very essence of English teatime, enjoyed under the shade of an apple tree on a warm summer’s afternoon with tea served in dainty cups and saucers. Raspberry jam with pips will give you a more rustic finish but use seedless if you want a more refined cake, or if you happen to have royalty coming to tea!
