This is my take on a classic Goan dish that I grew up eating, served over a bowl of warm, Plain Rice. The classic method does not use pancetta; however, I find it adds a nuanced note of flavor. If you’re a meat-and-potatoes type person, this one is for you. The Braised Cabbage with Coconut is a good accompaniment to this dish.
