This is a wonderful drink to enjoy when the weather gets warm, but I’ll admit that I’ve made it in the cold winter too (it works well with Christmas colors).

Ingredients

  • 8 oz [230 g] fresh ginger, preferably young
  • 2 cups [

Method

Rinse and gently scrub the ginger to remove any traces of dirt. If the ginger is young with a thin skin, leave the skin on; otherwise peel it. Cut into thin slices.

In a medium saucepan, combine the ginger, sugar, and 2 cups [480 ml] of water. Bring to a boil over medium-high heat. Turn the heat to low, add the hibiscus petals and long pepper, and boil for an additional 5 minutes. Remov
