This coconut cake was born out of two very different cakes. As coconuts are a staple in Goan kitchens, we make a coconut cake with semolina, called baath, that’s highly fragrant. The second cake that gave inspiration for this dessert was the Mexican tres leches, a marvelous cake made soft and rich by the addition of milk, which I find extremely soothing at all times of the year.
