This chutney arose out of necessity. Several years ago, I learned to make dosas and idlis, and while I could find other ingredients, it was trickier to find a source for fresh or frozen coconut. Pumpkin seeds and olive oil helped me re-create that texture with a similar flavor profile. As with the Mint Chutney, the addition of lime juice provides a sour note and inactivates the polyphenol oxidase, which reduces the chances of the green chlorophy
