Mango Amba Chutney

Summer holidays in Israel when we were young were wonderful, but nothing could compare with the excitement and bustle of the old bus station, with its multitude of Middle Eastern fast-food stands. This was a place of great eating, where we would eat falafel, among other dishes, but the best part was that you— could always help yourself to as much and as many of the pickles and chilli sauces as your palate would allow.
