The recipes in this chapter are closest to our hearts and stomachs, and at home on a Friday night we would look in the fridge with excitement to see what chutney or relish had been prepared to go with the evening meal.
So it was natural that we would have a sauce or relish to accompany the dishes that we cooked at The Gate, and in our opinion it is these sauces and salsas that really bring a dish to life.
