A perfect summer beginning—enriched with sweet fresh orange juice and Grand Marnier. Serve the soup on the same day it’s made.

Ingredients

  • 3 pints fresh strawberries, rinsed well and hulled
  • cups fresh orange juice (4 or 5 oranges)
  • ¼ cup

Method

  1. Purée all but 6 of the berries in a blender or food processor until smooth. Pour into a large bowl.
  2. Add the orange juice, Grand Marnier, and sugar. Add the crème fraîche and whisk until well blended. Cover and chill for 1 hour.
  3. Serve in shallow soup bowls or large balloon wine glasses. Slice the reserved strawberries, and carefully lay 3 slices on top
