Cobblers are a style of drink from the mid-1800s that were designed, like juleps (see Mint Julep), to cool you down in a hurry. But unlike juleps, the ice here isn’t flaky and snowy. It is instead crushed to the size of small pebbles, or “cobbles.”
Pour the simple syrup into a julep cup or double old fashioned glass filled two-thirds full with pebble-size ice. Add the sparkling wine to the cup to fill. Express the citrus zests over the drink and drop them into the cup. Garnish with the berries. Serve with a straw.
