Or Huevos con Papas y Chorizo – a very hearty Mexican breakfast. Perfect for brunch.


  • 2 large potatoes, peeled and diced
  • 1 lb (450 g) chorizo sausages
  • 1 large onion, chopped
  • 4 eggs
  • 1 avocado, sliced
  • A little parsley, chopped


Put the sausages into a large wide pan and cook, mashing them at the same time with a fork so that some fat is released. Add the potatoes and onion. Cover and cook over a medium heat until the potatoes are tender. This will take about 15 minutes.

Take off the lid, make four indentations in the mixture and break an egg into each. Cover and cook until the eggs are set – this should take about 5 minutes. Serve with the avocado and parsley.
