Almost all rice fritters and croquettes can be turned out in large quantities very cheaply, and calas are no exception. They are delicious either for breakfast, with jam, or at teatime, served like scones with jam and cream. If you make them with salt and pepper instead of sugar, then they go beautifully at breakfast with bacon and eggs.
