It is worth making several bottles of this vinegar during the summer. Not only does it make an excellent present, but it also retains its flavour and fragrance in a very pure form. I have one bottle which might almost be described as a mini-solera system; each year I replace the lavender flowers and top up with white wine vinegar.

Ingredients

  • 4 bottles white wine vinegar
  • 20 sprigs freshly picked lavender

Method

Open up each bottle of vinegar and place 5 sprigs in each. Re-stopper the bottles and leave in a sunny place for 2 weeks. If you can, then replace the lavender with fresh sprigs, put the bottles back in the sunny spot and leave for a further 2 weeks. If you only have one chance to pick and use lavend
