If you want to intensify the elderflower flavour, you can also add a drop of elderflower cordial; the slight hint of sweetness goes well with asparagus, and also with shellfish.

Ingredients

  • 1 large egg yolk
  • 300 ml/½ pint sunflower or grapeseed oil

Method

Put the egg yolk in a bowl and season lightly. Initially, add the oil to the egg with a very sparing hand, literally drop by drop, beating in each addition of oil before adding the next. When the mixture starts to thicken, the oil can be added a little more liberally, but never more than about a tablespoon at a time.
