- 5 green matoke
- 2 tbsp vegetable oil
- 3 hot green chillies, finely chopped
Method
- You can cook the matoke as above or boil it, unpeeled and cut into chunks.
- Fry the onion until it starts to turn light brown.
- Add all other ingredients except the salt, sugar and lime.
- Cook over a low heat for ten minutes.
- Mash the matoke, stir into the onion mix and cook for five minutes.
