  • 5 green matoke
  • 2 tbsp vegetable oil
  • 3 hot green chillies, finely chopped
  • ½ tsp turmeric
  • 1 small onion, chopped
  • 4 fresh tomatoes, finely chopped
  • 1 tsp crushed garlic
  • Salt, sugar and lime juice to taste


  • You can cook the matoke as above or boil it, unpeeled and cut into chunks.
  • Fry the onion until it starts to turn light brown.
  • Add all other ingredients except the salt, sugar and lime.
  • Cook over a low heat for ten minutes.
  • Mash the matoke, stir into the onion mix and cook for five minutes.
  • Add salt and other seasonings to suit your taste.
