These delightful little tofu pockets are served with soy sauce-based seasonings and filled with sushi rice.

Ingredients

  • 8 slices of deep-fried tofu sheets
  • 900 ml/ pints/

Method

  1. Par-boil the deep-fried tofu sheets in rapidly boiling water for about 1 minute. Drain under cold running water and leave to cool. Squeeze the excess water out gently. Cut each sheet in half and carefully pull open the cut end to make bags.
  2. Lay the tofu bags in a large pan. Pour in the dashi stock to cover and bring to the boil. Reduce the heat and cover, then sim
