Method

Whisk the egg yolks until pale and fluffy. Beat the lime zest, juice and pulp with the evaporated milk until thick and smooth. Combine with the beaten egg yolks. Spoon the filling into the prepared pastry case. Whisk the egg whites until soft peaks form. Sprinkle in half the sugar and whisk again until peaks form.
