Remove pits from cherries, place in crock and cover with vinegar for 24 hours. Drain vinegar well and measure cherries. Add sugar cup for cup and mix well. Let cherries stand in a cool place for about two days, stirring frequently until sugar is dissolved. Put into jars and store. This compote will keep for a long time.
The drained vinegar may be used for usual purposes.
