Kiwi’s lemony edge and clarity add freshness to savory dishes. This combination of sweet, long-cooked onions, salty ham bits, and tender chicken gets its tart finish from the light fruit.

Ingredients

  • 2 tablespoons light olive oil
  • 2 cups thinly sliced red onions (2 medium onions)

Method

  1. Heat olive oil in heavy, wide skillet over high heat. Add onions; cook on high heat for 5 minutes, stirring occasionally. Season with ¼ teaspoon salt and pepper. Turn heat to medium-low; cover and cook until onions are slightly caramelized, about 15-20 minutes. With slotted spoon transfer to plate.
