When I first encountered the frivolously dubbed English fool, it was made of the most traditional of fool-ish fruits, gooseberries (see Gooseberry Fool). At the time, however, no gooseberries were to be found in New York, where I live. The kiwi, similarly tart and green, made a delicious substitute that has become a worthwhile dessert in its own right.
