Eggplant Braciole

The braciole is one of our signature dishes at Vedge and one of my personal favorites. I hesitated to include it here since it’s also the most involved and labor intensive dish we make. However, after some experimentation, we hit on a great compromise with this home kitchen version. It’s still a good amount of work, but the results are really impressive. You want the eggplant sheets to be as close to paper thin as possible; this is the recipe to invest in a mandoline for if you haven’t alre
