A must-have on my dinner table when I fancy a Chinese-style ‘fakeaway’, I tried many different iterations to make these as delicious as their prawn counterparts. I settled on this recipe; they are crisp, moreish, and a hit with my vegan and omnivorous friends alike.

Ingredients

  • 140 g silken tofu
  • 1 tbsp aquafaba – from a tin of cannellini beans or chickpeas

Method

  1. First weigh the silken tofu into a small bowl. Measure in the aquafaba, flour and a splash of lemon juice, and mix well with a fork to combine it all together. Add the aonori – this lends the fishy flavour – and salt and pepper, and mix again.
  2. Spread the mixture on both slices of bread, a few millimetres thick. Scatter sesame seeds across the surface and press
