Who says you can’t have sushi if you are a vegan? These colourful rolls are fun to make and once you get the hang of the technique, you can become more adventurous with your fillings.
Put the rice in a pan with 300ml/½ pint/1¼ cups water and cook for about 20 minutes or as per packet instructions. The rice should absorb all the water. Transfer the rice to a large bowl, stir in the rice vinegar and put it to one side to cool.
Combine the vegan mayonnaise and soy sauce in a small bowl and put to one side.
