I love this topping for my tofu dogs. It reminds me of the topping offered by the hot dog vendors in New York. My husband says it’s every bit as delicious!


  • 2 teaspoons extra-virgin olive oil
  • 3 cloves garlic, coarsely chopped
  • 2 large, sweet onions, cut in half, then into thick ribs, and separated
  • 6 scallions, coarsely chopped
  • Salt and pepper
  • 1 tablespoon paprika
  • 1 tablespoon tomato paste
  • ½ cup water
  • 1 teaspoon naturally milled cane sugar, honey, or maple syrup


    Heat the oil in a 4-quart pot over low-medium heat. Add the garlic, onions, scallions, and salt and pepper to taste. Stir to coat the onions with the oil. Cover and cook for 10 minutes, stirring occasionally, until the onions are softened and have released some of their liquids. Stir in the paprika, tomato paste, water, and sugar, mixing well to combine. Cover and continue cooking, stirring occasionally, for an additional 20 minutes, or until the onions are soft. Taste for seasonings.
