Puddle puddings are a culinary miracle. You pour hot sugared water over cake batter and it looks a bit wet and unpromising, but then it emerges from the oven with the layers reversed. There is now a vanilla and allspice-scented sponge on top and a delectable sticky toffee sauce below. Perfect for winter family meals.

Ingredients

  • 100 g ( cup) plain flour
  • 1 teaspoon baking powder

Method

Find an ovenproof dish about 2 litres (8 cups) in capacity. Heat the oven to 190°C/170°C fan (375°F).

Mix together the dry ingredients - flour, baking powder, allspice and salt.
