Truffles add Spirit to Eggs, Pasta and Rice



If you manage to get hold of truffles the best way to keep them for two or three days is to pop them in a sealed jar with eggs or pasta, they will impart some of their flavour into the dried material or through the egg shells. Years ago Paul Levy, the head Foodie, organized a truffle hunt all over the country and many people sent in specimens. To keep them until all the participants could be gathered together for a feast the truffles were stored with rice. The first course of our truffle feast was simple boiled rice balls that were delicately flavoured with the truffle scent. They were terrific.
