Strawberry ice-cream must be the most popular ice-cream after vanilla. If strawberries are one of your favourite flavours, this ice-cream makes a wonderful dessert accompanied by some baked strawberries and a crisp biscuit.

Ingredients

  • 9 egg yolks
  • 1 cup castor sugar
  • 3 cups 35%-

Method

Whisk yolks with ¾ cup of the sugar until pale. Bring cream to the boil in a large saucepan. Pour hot cream into the egg mixture, stirring constantly. Return mixture to the saucepan and stir constantly with a wooden spoon over a low heat until the custard thickens enough to coat the back of the spoon. Make sure that the heat is not too high, or you’ll have scrambled eggs instead of custard. Str
