Angels must surely sleep on homemade marshmallows as their transcendent, bouncy lightness is unrivalled. To make the process painless, you will need a stand mixer, a sugar thermometer and a day without high humidity.

The lead recipe here uses vanilla and a suspicion of nutmeg, making the perfect sort for campfires, hot chocolate or squidging into s’mores. However, my love for the spice switch – gingerbread marshmallows – knows no bounds. I think you’ll need to try them both!
