Courgettes — or zucchini — cook really well on pizzas, especially if you use a potato peeler or mandolin to cut them into very thin ribbons. The intense heat from the wood-fired oven cooks them very quickly, giving them a flavourful charring, but because they have a high water content, they don’t dry out.

Method

  1. Build up the fire in the oven until it is about 400°C/750°F, this will take about 60 minutes. When it is up to temperature, push the fire to the back of the oven with a metal peel or coal hook, and keep the oven door closed.
