This pizza, topped with spicy lamb, gets a delicious charring in the wood-fired oven. The base gets wonderfully crispy, and the melted feta cheese adds a hint of saltiness. A perfect pizza for a long summer evening as the sun goes down.

Ingredients

  • ½ quantity pizza dough
  • 115 g /4 oz minced (ground) lamb

Method

  1. Build up the fire in the oven until it is about 350°C/660°F, this will take about 60 minutes. When it is up to temperature, push the fire to the back of the oven with a metal peel or coal hook and close the oven door.
