A home-made soft cheese can be made with thick live, Greek-style yogurt which has already been strained. It can be flavoured with herbs and garlic or left plain and served with soft fruits in season.

Ingredients

  • 1 kg (2 lb) Greek yogurt
  • herb seasonings
  • 1 clove

Method

Put the yogurt into a square of muslin or a clean J-cloth. Bring the edges together and tie with string. Hang the bag up to drip for a few hours, until the cheese is firm (around 3-4 hours).

Alternatively, remove from the bag while it is still very soft. Put the cheese into a bowl and season with salt. Spoon into moulds (small plastic plant pots will do) which have been
