A home-made soft cheese can be made with thick live, Greek-style yogurt which has already been strained. It can be flavoured with herbs and garlic or left plain and served with soft fruits in season.
Put the yogurt into a square of muslin or a clean J-cloth. Bring the edges together and tie with string. Hang the bag up to drip for a few hours, until the cheese is firm (around 3-4 hours).
