A traditional cheesemonger, like Patrick Rance who visited cheesemakers, bought cheese which was not fully matured and had the facilities for ripening the cheese himself, judging when it was ready to sell. McLelland’s Cheese Market in Glasgow is the largest and most sophisticated wholesale cheesemonger in Scotland, buying mostly cheddar from large creameries. Iain Mellis, cheesemonger in Glasgow and Edinburgh, is Scotland’s Patrick Rance, visiting the cheesemakers, buying direct, maturing and ripening farmhouse cheeses and selling them when he judges they are at their best.
