As new cheeses are developed, the production of others may cease, so that any attempt to give a run-down of all Scottish cheeses may not always be entirely accurate.
At the time of writing, the following list includes most established cheesemakers, some of them with a longer history than others. They all make unique cheeses.

Arran Blue (pasteurized) cows’ milk. Brodick Blue (unpasteurized) ewes’ milk. Crottin, small goats’ milk cheese.
