These members of the allium family go by many different names: scallions, spring onions, salad onions or green onions. The Japanese call them ‘negi’ and the Asian variety are thinner and much longer. They are used in most Asian cuisines in fried rice, stir-fries, salads and, most importantly, as a garnish.
