Key limes, also known as Mexican limes, have a distinctive tart and acidic flavor and a strong appealing aroma, which make them particularly appropriate for sweet desserts. The more common lime sold in the United States is the Persian lime. It can be substituted but your dish will not have the same distinctive flavor. Key limes are sometimes available fresh. The yellow ones are the ripe ones. Choose these because they do not ripen after they are picked. They are grown in Mexico all year round and in Florida from June to September. The most common form of their juice is found in shelf-stable bottles in specialty food stores and online. We think using this juice is worth the small effort to find it.
