Several recipes in this book call for the melting of chocolate using a double boiler. You can make your own by using a heatproof bowl that fits over the top of a pot. Fill the pot about one-third full of water and bring to a boil. Once boiling, lower the heat to medium, bring the water to a simmer, and place the bowl with the chocolate on top. Make sure the bottom of the bowl is not touching the water. Stir your chocolate until melted and smooth. Avoid overheating and continue to scrape the sides to avoid burning.
