It is extremely important that all ingredients are at room temperature before starting. Depending on the temperature of your kitchen, you may need more than the “at least 30 minutes” stated in the recipe to allow the ingredients to come to room temperature.
  1. Sift all of the dry ingredients.

  2. Cream together the butter and sugar until very light and fluffy, about 5 minutes at medium speed.

  3. Add any extracts, and then add the eggs in one at a time, mixing until completely absorbed before adding the next egg to avoid breaking the mixture.

  4. Alternate adding the dry ingredients in with the wet ingredients in stages, starting and ending with the dry ingredients.

  5. Add the dry ingredients in three additions and the wet ingredients in two additions.

  6. Transfer to the prepared pan(s) and bake.
