As discussed in the cookie chapter, there are two cake mixing methods that sort of correspond with the cookie mixing methods we covered: The One-Bowl Method for Cakes (also known as the Blending Method) and the Creaming Method for Cakes. Most basic cakes are made using one of these two methods.

There is also a category of mixing methods in cake making called foaming or sponge methods. These titles are general terms for a variety of methods that rely on whipping air into eggs (either whole or separated) to help leaven the cake. The process by which the air is whipped into the eggs varies depending on the variety of cake.
