This alternative method for making bread includes fermentation, which produces a light texture.
Sieve the flour into a large mixing bowl, add the salt and sugar, if specified in the recipe, and make a well in the centre. Add the yeast mixture.
Draw in some of the flour from the sides of the bowl to form a soft paste in the well. Cover the bowl with a clean, damp tea towel and leave for about 30 minutes to expand slightly.
Add the remaining liquid ingredients, as specified in the recipe, to the well and stir in the rest of the flour to form a soft dough.
