There is a wide variety of mild chiles used in the Caribbean. The common names vary from pimento or sweet capsicum to seasoned peppers or vegetarian peppers, but some hybrids give a distinct flavor of Scotch bonnet without the added heat. Because these mild chiles have a low water content, Hungarian wax peppers can be substituted for them.
