One of the more obscure ingredients in the spice cupboard, black salt has a very distinct umami taste and a sulphurous aroma, like hard-boiled eggs. A little completely transforms my tamarind sharbat recipe and works so well with the sour notes from the tamarind. In Ayurveda โ the ancient Indian medical system โ black salt is considered a cooling spice.
