Chaat (or chat) is the term given to Indian snacks and appetisers. Chaat masala is my absolute favourite masala; it is so versatile and a taste sensation overloaded with sweet, sour and salty notes. It includes a whole medley of spices and seasonings including mango powder, black salt, cumin, black pepper, dried mint, asafoetida, cloves, coriander, dried ginger, chilli powder, sugar and salt. The masala works equally well with fruit and vegetables, so you’ll find it makes many appearances in this book, from the chaat salad to daler bora and sweet potato tikki as well as in my green mung, garlic and tomato dal which is not a traditional addition, but one that I have adapted as I think it works so well.
