Ras-el-hanout literally means the ‘head’ – i.e., star – ‘of the spice shop’. In full aristocratic form, it is a blend of nearly 30 spices and flavourings, including dried rose buds and lavender, but everyone who blends it has his own formula. Supposed to increase virility.
