Double Lining a Deep Tin

Some rich fruit cakes have very long baking times, so to protect them from the oven’s heat use a double lining. This will prevent the fruit burning and the crust overcooking. Once double lined, place a base liner into the tin. For extra protection, tie a folded newspaper around the outside of the tin.

  1. Fold baking parchment sheet lengthwise in half. Wrap around tin. Mark 2 cm longer than circumference.

  2. Snip 2-cm diagonal cuts along the folded edge, 3 cm apart. Secure inside tin, cut-edge down to line base.

  3. Fold another baking parchment sheet in half, lengthwise. Wrap around tin and secure with tape.
