Brown and white hen eggs have the same nutritional value and flavour: the shell colour is dependent on the breed of the hen. Brown eggs are usually a bit larger than white eggs, which is what makes them a little more expensive. The size of an egg is influenced by many factors, the major one being the age of the hen — older hens lay bigger eggs. There is a wide variety of eggs available, with many consumers making the choice not to buy those from battery-farmed hens or hens which have been given antibiotics to prevent disease in cramped conditions. Free-range eggs are generally popular, but the term ‘free-range’ can vary in each country and you need to check the packaging carefully and do your own research. Organic, free-range eggs, we can assume, have been produced by the happiest chickens of all.
