How to…Fry an Egg

Most people feel confident about frying an egg. However, there is a big difference between a well-fried egg and a rubbery one. Add a little oil to the butter to prevent the butter burning.
Method
  1. Heat a heavy-based non-stick frying pan and add some oil and a knob of butter. When the butter is sizzling, carefully break the egg into the pan and gently fry over medium heat, swirling the pan occasionally.
  2. For eggs ‘sunny side up’, cook for 1 minute, until the white is set. As the egg cooks, spoon some hot oil over the yolk so that the surface sets. Turn off the heat and leave to stand for 1 minute.
  3. For eggs ‘over easy’, cook for 1 minute until the white is set, then use a spatula to turn the egg over. Cook for 30 seconds (no more) over low heat. For fully hard yolks, cook for 1 minute.
  4. Lift out the egg with a metal spatula, drain on paper towels and season well before serving.
