Method
- Attach the blades to your machine: the wide one for tagliatelle, the narrower one for linguine.
- Feed a sheet of pasta into the machine and carefully collect the cut pasta as it comes out at the other end.
- Hang the pasta to dry on a floured broomhandle or on a pasta dryer, or coil it into nests. Toss the nests in a little semolina to stop them sticking.
