There can be no ingredient more instantly connected with Italian cooking than pasta. Marco Polo used to be credited with its discovery during his travels in medieval China and, while it is undoubtedly true that both countries have a long history of noodle-making, it has now been proved that pasta existed in the Mediterranean world long before Marco Polo.
