White or pale-coloured vegetables and fruit, such as cauliflower, artichokes and apples, tend to darken when cut and exposed to air. To prevent this, put the cut vegetable or fruit in a bowl of water and add 1 tablespoon of lemon juice or white wine vinegar. This acidulates the water and prevents this from occurring.
