The most important edible flowers in cooking aren’t what you may first think. Love them or loathe them, broccoli and cauliflower are actually immature flowers, and the artichoke is the large flower bud of a thistle, eaten before the flower has opened. Of course, some plants do produce edible flowers, such as geranium and rose, but these are not covered here.
